Korean seaweed soup

Ingredients (for 2-3 servings)

  • 50 g dried miyeok (seaweed)
    • Available in Asian stores.
  • 150 g beef (e.g. beef brisket or soup meat, cut into small pieces)
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1–2 tsp salt (to taste)
  • 1 garlic clove (finely chopped)
  • 1 liter of water or beef broth
  • Optional: A few drops of fish sauce for extra flavor

1. Prepare the seaweed

  1. Place the dried miyeok in a large bowl of water and let it soak for about 20-30 minutes.
  2. Once the seaweed is soft and swollen, rinse well to remove any excess sand or salt.
  3. Remove the seaweed from the water, squeeze out the excess water, and cut it into bite-sized pieces. Set aside.

2. Marinate meat (optional)

  • Marinate the sliced ​​beef with 1 teaspoon of soy sauce, some chopped garlic, and a drizzle of sesame oil. Meanwhile, prepare the other ingredients.

3. Brown the meat

  1. Heat a large pot over medium heat and add the sesame oil.
  2. Add the beef and stir-fry until lightly browned (about 3-4 minutes).
  3. Add the chopped garlic and continue frying for 1-2 minutes until the garlic is fragrant.

4. Add seaweed

  1. Add the prepared seaweed to the seared meat.
  2. Fry together for 2-3 minutes so that the seaweed absorbs the aroma of the sesame oil and the meat.

5. Pour in the broth and let it simmer

  1. Pour water or beef broth into the pot and bring the soup to a boil.
  2. Reduce the heat to medium and simmer the soup for 20-30 minutes to allow the flavors to blend.

6. Season to taste

  1. Season with soy sauce, salt and possibly a few drops of fish sauce.
  2. If desired, add a little more water if the soup is too salty.

7. Serve

  1. Serve the finished Miyeok-Guk in bowls.
  2. Enjoy with freshly cooked rice.
