Ingredients: 1 kg pork ribs, 100 ml rice wine, 2 bay leaves, 1 leek, 2 tsp garlic, ½ onion, ½ apple,
Sauce: 100 ml soy sauce, 100 ml mirin, 2 seaweed leaves, 2 tbsp sugar, 2 tsp syrup, pepper
Preparation:
1. Prepare the ribs: Cut the ribs into individual pieces.
Place them in a bowl of cold water and let them soak for about 30 minutes to remove the blood.
2. Prepare the marinade: Place the following ingredients in a blender: 1 onion, 1 apple, 5 tablespoons soy sauce, 2 tablespoons cooking wine (e.g. Mirin), 2 tablespoons sugar, 1 tablespoon chopped garlic, a pinch of pepper
Mix everything until you get a smooth sauce.
3. Pre-cook the ribs: Fill a large pot with water so the ribs are completely covered. Bring the water to a boil, add the ribs, and let them boil briefly. Once the water boils, remove the ribs and rinse them under cold water to remove any foam and impurities.
4. Braise the ribs: Reduce the water in the pot to about 2 cups (400 ml). Add the prepared marinade and place the ribs in it. Simmer over medium heat until the sauce thickens and the ribs are well coated.
5. Season and finish: Finally, add 1-2 tablespoons of corn syrup (or honey) and stir well to give the ribs a shine.
6. Serve: The braised ribs are ready! Serve them hot with rice and side dishes.
Tips: - For additional flavor, you can add vegetables such as carrots, potatoes, or spring onions while braising.
- The longer the ribs simmer in the sauce, the more tender and flavorful they become.
