Tonkotsu Ramen (돈코츠 라멘)

Total duration: approx. 8–12 hours

  • Cooking broth: 6–12 hours (the longer the cooking time, the more intense the flavor)
  • Prepare chashu (pork belly): 1.5–2 hours
  • Marinated egg (Ajitsuke Tamago): 4–6 hours (for marinating)
  • Cook pasta & assemble: 10–15 minutes

Ingredients:

For the broth:

  • 1 kg pork bones (e.g. back or leg bones)
  • 500 g pork belly
  • 1 onion (halved)
  • 1 garlic clove
  • 1 piece of ginger (approx. 5 cm, sliced)
  • 1 leek (cut into pieces)
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp salt

For the Chashu (pork belly topping):

  • 500 g pork belly (with skin)
  • 100 ml soy sauce
  • 50 ml mirin
  • 50 ml sake
  • 2 tablespoons sugar
  • 1 garlic clove (chopped)
  • 1 piece of ginger (grated)
  • 1 spring onion

For the toppings:

  • Ramen noodles
  • Spring onions (chopped)
  • Soft-boiled egg (Ajitsuke Tamago)
  • Nori (seaweed)
  • Bamboo shoots (Menma)

Preparation:

  1. Prepare the broth:

    • Rinse pork bones well with water and bring to a boil in a large pot of water.
    • Drain the water, wash the bones again and place them in fresh water.
    • Add onion, garlic, ginger and leek.
    • Simmer on low heat for at least 6–12 hours, adding water occasionally.
    • Finally, season with soy sauce, mirin and salt.
  2. Prepare Chashu (pork belly):

    • Brown the pork belly on all sides in a hot pan.
    • Mix soy sauce, mirin, sake, sugar, garlic, ginger and spring onion in a pot and add the pork belly.
    • Simmer on low heat for 1-2 hours until the meat is tender.
    • Cut into slices and set aside.
  3. Cook pasta:

    • Cook ramen noodles in boiling water according to package instructions.
  4. Compile:

    • Place a portion of cooked ramen noodles into a bowl.
    • Pour hot tonkotsu broth over it.
    • Arrange chashu, spring onions, egg, nori and bamboo shoots on top.

  • Serving tips for Tonkotsu Ramen

    Preheat the bowl – so the broth stays hot longer.

    Arrange toppings beautifully – harmoniously place chashu, egg, spring onions, nori and bamboo shoots.

    Cook noodles al dente – Cook thin ramen noodles for only 30-45 seconds to keep them firm to the bite.

    Customize your taste – add garlic, sesame or chili oil as desired.

    Offer extra portions – Serve “Kaedama” (extra noodles) for those who are hungry.
